Chili-Stuffed Bacon-Wrapped Jalapeño Poppers

Loaded with chili and wrapped in bacon, these jalapeño poppers are the ultimate pass around party food. 


For the Poppers

  • 10 jalapeño peppers, sliced in half
  • 1/2 cup cheddar cheese, shredded
  • 20 slices bacon

For the Chili

  • 2 tablespoons butter
  • 1/2 onion, diced
  • 1 pound ground beef
  • 1 tablespoon chili powder
  • 1/2 teaspoon cumin
  • 1 teaspoon lime juice
  • 1 clove garlic, minced
  • 14 ounces diced tomatoes
  • 1/4 cup BBQ sauce
  • 1/2 cup beer
  • > salt and pepper to taste

Preheat your grill for indirect heat.
In a preheated cast iron skillet or saucepan, sauté the onions until golden brown. Add the ground beef, chili powder, cumin, oregano, minced garlic salt and pepper then fully brown the ground beef over medium high heat. Add the remaining chili ingredients and simmer 10 more minutes. Then, remove from heat.
Cut each jalapeño in half lengthwise and core the interior using a spoon. Fill each half jalapeño with chili, top with shredded cheddar cheese and wrap with a slice of bacon.
Place the jalapeño poppers on the indirect side of the grill and close the lid. Cook for 45 minutes at 275°F.
Remove the poppers from the grill and serve.
