In the mood for comfort food? This hearty dish brings big Italian-inspired flavors to the table in no time at all. Made with juicy ground beef, sweet bell peppers, buttery artichoke hearts and plenty of gooey, melted mozzarella cheese, our Griddletop Tortellini is a quick and satisfying meal that can be whipped together any day of the week.

Ben made this recipe on the 3-Burner Gas Griddle, but you can make it on your grill.
Ingredients
For the tortellini
- 1 pound ground beef
- 1 purple onion, diced
- 2 tablespoons garlic, minced
- 1/2 jar roasted red peppers
- 1/2 can artichoke hearts, drained
- 1 family-sized bag tortellini (8 ounces)
- 1 jar pasta sauce
- 1 large handful spinach
- 1 cup mozzarella cheese, shredded
Directions
1.
Preheat the flat top to medium heat.

When the grill is hot, drizzle with oil, and add the ground beef and onion directly to the griddle.

Season with the Italian seasoning and any spices you’d like, then cook until the meat is browned.

Add minced garlic, red peppers and artichoke hearts to the meat, then combine.
5.
Continue to cook for 2 more minutes.
6.
Add the tortellini to the mixture and combine.
7.
Pour the pasta sauce over the tortellini and fold until all the ingredients are thoroughly combined.
8.
Add the spinach and cook for another 3 minutes.
9.
Top with mozzarella cheese and combine.
10.
Remove from heat, plate and serve.
