Grilled Brussels Sprouts
Brussels sprouts tend to be more polarizing than other vegetables, especially when cooked wrong. When cooked right, they can taste so good that they are more of a savory treat than healthy side dish. Tossed in rich olive oil, grilled to crunchy perfection and seasoned with garlic and herbs, this Grilled Brussels Sprouts recipe is a game-changer.
Ingredients
FOR THE BRUSSELS SPROUTS
- 1 pound Brussels sprouts
- 4 tablespoons extra virgin olive oil
- 3 tablespoons coarse ground dijon mustard
- 3 cloves garlic, minced
- 1 sprig thyme
- 3/4 teaspoon smoked paprika
- 1 teaspoon apple cider vinegar
- 1/4 teaspoon fresh-cracked pepper
- 1/8 teaspoon kosher salt
Directions

Preheat grill to 400°F. Chop Brussels sprouts in half length-wise and place in a medium-sized bowl.

In a small mixing bowl, mix the olive oil, dijon mustard, garlic, thyme, smoked paprika and apple cider vinegar. Pour over Brussels sprouts and toss until evenly coated.

Place Brussels sprouts in a non-stick grill basket. Place the basket over direct heat. Grill for about 3 to 5 minutes.

Toss the Brussels sprouts in the basket and grill for another 3 to 5 minutes until nicely charred.

Remove from heat and add fresh-cracked pepper and salt to taste.
