Ingredients
For the Poppers
- 1 pound ground pork
- 2 tablespoons jerk marinade
- 16 jalapeño peppers
- 8 ounces cream cheese
- 2 tablespoons brown sugar
- 1 pound honey and maple bacon
Other Tools
- 4 wooden maple grilling planks
Directions
1
Place the pork and the jerk marinade into a plastic bag or bowl and work the together. Refrigerate for 2 to 12 hours.
2
Preheat the grill to medium high. While the grill preheats, slice the peppers in half lengthwise. Spoon out the white flesh and the seeds.
3
Brown the pork in a skillet and let cool. While the pork cools, mix the cream cheese and brown sugar together in a bowl.
4
Spoon the cream cheese in each of the peppers, placing a chunk of the ground pork onto the cream cheese.
5
Take the pound of the bacon and cut all the slices in half. Wrap each pepper boat with a half slice of bacon.
Hot Tip
Use toothpicks to secure the bacon to the peppers.
6
Soak maple planks in water for an hour. After soaking, place the planks on the hot grill and close the lid for 3 minutes. Flip the planks over and place the poppers on the plank.
7
Close the lid until the bacon is browned which is 15 to 25 minutes depending on the heat of the grill.
