Grilled Pork Chops With Pineapple Salsa
These tempting double-thick grilled pork chops with fresh fire-roasted pineapple salsa will definitely add spice to your life. Grill these delicious spice-rubbed bone-in pork chops alongside sliced pineapple, peppers and onions for a sensational pineapple salsa.
Ingredients
For the Pork Chops
- 4 double-thick pork chops
- 3 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- salt and pepper to taste
For the Pineapple Salsa
- 3 tablespoons olive oil
- 1/2 fresh pineapple, peeled, cored and sliced
- 1 jalapeño pepper
- 1 red bell pepper, seeded and sliced
- 1/2 yellow onion, peeled and thickly sliced
- juice of 1 lime
- 2 tablespoons fresh chopped cilantro
- salt and pepper to taste

Preheat your grill to 400°F.

Combine olive oil, cumin, chili powder, salt and pepper on a large plate.

Coat pork chops on all sides with the oil and spice mixture. Set aside.

Coat the pineapple, peppers and onion with olive oil.

Place the pork chops on the grill and cook for 10 to 12 minutes on one side.

Flip pork chops and place the pineapple, peppers and onion on the grill alongside the pork. Cook for 5 to 6 minutes. Then flip the pineapple, peppers and onions. Cook for an additional 5 to 6 minutes until lightly charred.

Remove everything from the grill. Chop the fire roasted fruit and vegetables into large chunks and place in a medium-size bowl. Squeeze in lime juice, add salt, pepper and cilantro. Mix together.

Top the pork chops with pineapple salsa and serve.
