Grilled Sweet Potato Fries With Chipotle Mayo
For the Fries
- 6 large sweet potatoes
- 1/3 cup olive oil
- 1/4 cup kosher salt, divided
For the Chipotle Mayo
- 1 cup mayonnaise
- 3 tablespoons chipotle hot sauce
- 2 teaspoons lime juice
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
Fill a large pot with water. Add potatoes and 2 tablespoons of salt. Boil for 15 minutes, drain and let cool until safe to touch.
Combine mayonnaise, hot sauce, lime juice, garlic powder and pepper in a medium-size bowl. Set aside in the refrigerator.
Preheat your grill to 450°F.
Cut potatoes into wedges. Brush with olive oil. Sprinkle remaining salt on both sides of potato wedges.
Place potato wedges on the grill. Cook for 3 to 4 minutes per side.
Remove from grill and serve with a great burger and a side of chipotle mayo.
