Juicy ground beef, fresh herbs and smoky harissa make this unique take on a smashburger a must-try dish. Crispy, complex and flavorful, these Kefta Arayes can be prepped in advance and served up hot—with a side of tangy tahini, in minutes.

Ingredients
For the kefta
- 3 pounds ground beef, 80/20
- 1 onion, finely diced
- 1 bunch fresh parsley, finely diced
- 1 jalapeño, finely diced
- 1 teaspoon allspice
- 1 tablespoon salt
- 1 tablespoon black pepper
For the build
- 4 large pitas
- 1 tablespoon harissa
- 2 tablespoons olive oil
- 1 large tomato, sliced
- > Tahini, on the side
Directions
1.
In a large bowl, combine the ground beef, onion, parsley, jalapeño, allspice, salt and pepper.

Split in half and roll half the mixture into 2 inch logs.
3.
Place the logs in the freezer and save.
4.
Use your hands to spread the remaining kefta evenly across each piece of pita bread.
5.
Preheat the grill to 500ËšF.
6.
In a separate bowl, combine the harissa and olive oil.
7.
When the grill is hot, drizzle it with olive oil.
8.
Brush the back of the pita with the harissa mixture and place the pita bread on the grill, meat-side down.
9.
Cook until crispy and golden brown, flipping the pita over every few minutes.
10.
Top with tomatoes and remove from heat.
11.
Serve with tahini sauce on the side.
