Massaging a rub into your brisket is an important part of the smoking process. The rub not only helps with a nice bark, but also infuses flavor throughout the brisket's fibers and muscles during smoke. Whether you have a short amount of time or hours on end for the spices to rest, a dry rub will make all the difference.


For the Rub

  • 2 tablespoons chili powder
  • 1 tablespoon coarse salt
  • 1 tablespoon brown sugar
  • 2 teaspoons garlic salt
  • 2 teaspoons onion powder
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne pepper
  • 1 tablespoon dried oregano

Blend all ingredients together.
Cover the entire brisket generously with the rub, gently massaging.
