Bacon Jalapeño Popper Grilled Cheese

Combining the comfort of classic grilled cheese with the boldness of jalapeño poppers, these Bacon Jalapeño Popper Grilled Cheese sandwiches are a tasty twist. Pimento cheese melts together with freshly-charred jalapeño peppers and layers of crispy bacon to create a wildly indulgent grilled cheese that comes together easily and disappears in a flash.
This recipe was created by our partner, Brandyn Baker @blackdog_bbq, who made it on the Edge Electric Grill but you can make it on your grill or griddle.
Ingredients
For the grilled cheese
- 5 slices thick-cut bacon
- 3 jalapeño peppers
- 4 slices bread
- 3 tablespoons mayonnaise
- 1 cup pimento cheese
Directions

Preheat grill to 325°F.

Place bacon and jalapeños directly onto hot grill grates and cook until the bacon is crisp and the jalapeños are charred.

Remove from heat and let cool until peppers reach room temperature.

Cut in half lengthwise and scrape away some of the seeds and flesh, depending on your desired level of heat.

Slather bread slices with mayonnaise on one side and flip over.
6.
Top the bread with bacon, jalapeños, pimento cheese and another slice of bread, slathered with mayo on the outside.

Place grilled cheese sandwiches onto hot grill grates and cook until the bread is toasted and cheese is melted, about 2 to 3 minutes per side.
8.
Remove from heat, slice in half and serve.
