Salted caramel adds rich complexity to this knock-your-socks off apple crisp. With slightly tart cinnamon-spiced apples and an irresistibly sweet and crunchy topping, this easy on-the-grill dessert is a warm and comforting addition to any occasion or meal.

Ingredients
For the filling
- 3 pounds Honeycrisp apples, peeled, cored and sliced
- 1 tablespoon lemon juice
- 2 tablespoons granulated sugar
- 1/2 tablespoon cinnamon
For the crumble
- 1/2 cup granulated sugar, divided
- 1/2 cup dark brown sugar
- 1 cup all-purpose flour
- 1/2 tablespoon cinnamon
- 1 cup old fashioned oats
- 3/4 cup chopped pecans
- pinch nutmeg
- 1/4 tablespoon salt
- 1 stick + 2 tablespoons butter
For the salted caramel
- 1 cup granulated sugar
- 6 tablespoons salted butter
- 1/2 cup heavy cream
- 1 teaspoon sea salt
Directions
1.
Peel, core and slice the apples.

In a large bowl, combine apples, lemon juice, granulated sugar, and cinnamon.

In a separate bowl, combine granulated sugar, dark brown sugar, flour, cinnamon, old fashioned oats, pecans, nutmeg, salt, and butter and combine until mixture forms a crumble.

Place a 12 inch cast iron skillet on the grill and preheat to 500-550º F.

Turn off two burners on one side and move the skillet to cook over indirect heat.

Coat the pan with butter.

Add apples to skillet and distribute evenly, then top with the crumble.

Close the lid and cook over indirect heat until the apples are tender when pierced with a fork and the crumble is brown and crispy, about 30 to 35 minutes.

While the apple crisp is cooking, heat a stainless steel saucepan over medium heat.

Add sugar and stir constantly until the sugar melts and begins to form clumps, about 6 minutes.

Once the sugar is completely melted, add the butter and stir until combined.

Slowly add the heavy cream to the pan and stir until combined.
13.
Allow the caramel to boil for 1 minute.
14.
Remove from heat, stir in the salt and set aside.
15.
When the apple crisp is done, remove from the grill and drizzle with salted caramel.
16.
Plate, serve and enjoy.
