Get all the flavor of hot wings with none of the sticky fingers when you make this Grilled Buffalo Chicken Dip recipe. Made with shredded grilled chicken, three cheeses and cayenne hot sauce, it’s cooked on your grill grates in a cast-iron skillet until it’s bubbling hot and ready for dipping. Creamy and extra cheesy, it’s an all-time favorite shareable dip.

Ingredients

For the Chicken

  • 1 (2-2 1/2-pound) whole chicken
  • 3 tablespoons BBQ seasoning

For the Buffalo Dip

  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup cream cheese
  • 1/3 cup cayenne hot sauce
  • 1/4 cup crumbled blue cheese
  • 1 teaspoon garlic salt
  • 1/4 teaspoon ground celery seeds
  • 2 tablespoons chopped chives

Preheat your grill to 350°F, with one burner set to medium heat and the other burner(s) off to create an indirect cooking zone .

Spatchcock the chicken using chicken shears or a sharp chef’s knife; then season both sides with barbecue seasoning.

Place the bird on the grill, skin side up, over indirect heat and close the lid. Cook until the internal temperature reaches 165°F on an instant-read thermometer , about 1 hour.

Remove the chicken from the grill and let rest at room temperature for 15 minutes. Using meat claws or two forks, shred the chicken, making sure to discard any bones or chunks of fat.

In a large bowl, combine shredded chicken with cheddar cheese, sour cream, cream cheese, hot sauce, blue cheese, garlic salt and celery seeds.

Transfer mixture to a cast-iron skillet and place the skillet on the grate(s) over indirect heat. Close the lid and cook until bubbling, about 12 minutes.

Remove from grill and garnish with chopped chives (optional).

Serve with crackers, pretzels or veggies.
